Now this year June may be referred to “Juneuary”, but on the odd sunny day I like a cold drink in the morning (preferrably one that provides energy of course!). I thought I would test out my own at home cold brew as it seemed pretty straight forward. Now my sweet tooth always has me craving just that; a good sweetener. I personally almost never eat dairy, as I am an almond milk gal with my coffee, so I went on the hunt to find a good milk/sweetener combo that is dairy free. Of course Pinterest never fails in this department; you can always find the exact type of recipe you are looking for there. I made this vegan condensed milk with coconut milk and ground vanilla beans, and simply just replaced the coconut sugar with maple syrup (as that is what I had on hand). Mix the cold brew with ice, condensed milk and a splash of almond milk, and watch out. This one is TASTY. Cold Brew with Vegan Condensed Milk 2/3 cup coffee beans, ground 3 cups room temperature water 1 can full fat organic coconut milk 1/3 cup maple syrup (or coconut sugar, honey) 1 tsp ground vanilla beans Place ground beans in french press. Add water and stir mixture. Place lid on top, without pushing press down. Store in fridge for 12 hours. In a saucepan, heat coconut milk and maple syrup on medium high. Whisk together as the mixture forms bubbles, and begins to thicken. Continue to whisk often for approx. 40 minutes, until condensed milk reduces to about 1 cup. Add ground vanilla beans and stir. Remove from heat. The milk can be stored in the fridge for up to two weeks. Mix cold brew with condensed milk and ice. Add a splash of almond milk for an extra milky flavour!
