
There have been some beautiful, hot sunny days as of late, and it has me craving all things summer; including popsicles. I love the idea of making my own, not only for the reason that they are ridiculously easy to make, but also to see what exactly goes into making them.
I was introduced to Lucuma earlier this year, and I have to say, this subtropical fruit (also a superfood) has a seriously tasty flavour; a blend of maple and mango. Who on earth would turn down that combination?! Lucuma is packed with beta carotene, iron, zinc, vitamin B3, calcium, and protein. It is also known to support skin health and digestion. Based on the flavour and the health benefits, I thought to myself, how amazing would this be in popsicle form??
I began my search, and came across this recipe. They require very few ingredients, and take no time at all to make. I even let Rex have a lick, which was quickly followed by him taking out of my hands, and going to town on it. lol. He is clearly a fan 😉
Lucuma PopsÂ
1 can of full fat organic coconut milk
5 tbsp lucuma powder
1/4 of agave syrup or organic maple syrup (I used maple)
1/2 cup almond milk (or any milk of your choice)
1 tsp organic vanilla extract
Blend all ingredients in blender. Poor into popsicles molds. Freeze for 3+ hours before eating.
