You WILL in fact win friends with this salad. Andrea Saliba introduced me to Jicama (pronouned hee-cah-maa), a tuberous root vegetable of a vine, native to Mexico. This large turnip like vegetable has a crunchy texture, and is filled with fiber and antioxidants. I’m usually the type to grab my same produce every week; only on the rare occasion trying the odd new fruit or vegetable if a recipe calls for it. When I cut into the jicama and had my first taste, I was instantly inspired to research recipes. I found this one for a Jicama salad, and added watermelon for extra flavour (and colour!). Jicama Salad with Mango + Watermelon 2 tbsp fresh lime juice 2 tsp honey (I used organic raw honey) 1/4 tsp kosher salt (I used himalayan rock salt) 1 1/2 cups thinly sliced mango 1 cup chopped watermelon 1 1/2 cups julienne-cut peeled jicama 1/4 cup thinly sliced red onion 1/4 cup chopped fresh cilantro Chop all vegetables/fruit, and place in salad bowl. Mix together lime juice, honey and salt in separate bowl. Pour over salad and stir together. Enjoy!! Please let me know your thoughts on this recipe.
